Just when you thought i’d fallen off the healthy lunch wagon, here I am with another edition of Lunch At Your Desk.
Today I bring you the Leftovers Salad with New York Steak!
(apologies for the shadow cast by my arm – i’m definitely getting better with the whole ‘good lighting makes good pictures’ thing but clearly have a way to go!)
The leftovers salad is my go-to lunch when there weren’t enough leftovers from dinner to just have that meal for lunch again the next day. I find that there are generally some odds and ends of roast vegetables that are left in the pan and often a lonesome little bit of meat. It’s not too difficult to fluff it up with some raw vegetables and a simple dressing the next morning to turn it into a substantial lunch.
The night before hubs and I had made some delicious New York cut steak and roast vegetables. Hubs ate all his steak but I only managed about half of my huge piece. So I wrapped the rest in foil and left it in the fridge for the next day. In the morning I sliced the remaining meat up and left the gristly fatty bits behind. I added some raw carrots, lettuce, sweet corn and radish to bulk up the few remaining roast veggies.
and bam! Healthy lunch that travels pretty well too
For a dressing I just drizzled the salad with olive oil, a twist of salt from the grinder that I keep in my desk drawer and squeezed some lemon on top. There may have even been some pepitas sprinkled on top for good measure! So here is another healthy lunch dish that requires barely any prep and makes the most of the odds and ends that might otherwise go to waste a the end of a meal.

Sometimes the only thing that makes things bearable is knowing that you have an escape route. Hubs and I planned this trip to Europe knowing that we would soon both be needing a change of scenery. I love this city and I love my job but I was getting some seriously itchy feet. So no sooner had I finished teaching my last class for Term 2 then we were off to the airport jetting to Europe. Hooray! While my first love is English, I was also a keen History student at school and uni so deeply historical Berlin was the first stop on our trip. And of course, a trip to Germany means two things:
Double choc chip cookie icecream sandwiches. Try saying that ten times quickly. With a mouth full of these delicious desserts. Impossible I tell you! But don’t worry, while you wont win any tongue twister awards, you will be left with a belly full of creamy icecream and ooey gooey cookie. Tell me that doesn’t warm your little heart on this cold Friday evening.

I know that it might seem like my love of leftovers knows no bounds, but this week we are changing things up with an old favourite. The humble sandwich. A leftovers salad is pretty damn nutritious but it can be pretty fiddly to get together in the haze of 6am sleepyness so when that happens, this little baby saves my life. As I have a deep love for all things creamy and tangy, the egg salad sandwich is what I crave when I decide that the sambo is happening for lunch. I won’t pretend that I got together all these ingredients in the morning but i’m sure if you were super organised you could boil your eggs while you were in the shower or something? Surely? Maybe? Blah.
I make mine with dark rye bread, a few green beans for some crunch and a couple of eggs with some dollops of mayo and mustard. Sometimes I go totally crazy and put in wholegrain mustard too! Oh my!
All the assembly that is needed then you’re ready to go in record time. Don’t assembly this the night before though or it will most likely go a little soggy by lunch the next day.
