Double choc chip cookie icecream sandwiches. Try saying that ten times quickly. With a mouth full of these delicious desserts. Impossible I tell you! But don’t worry, while you wont win any tongue twister awards, you will be left with a belly full of creamy icecream and ooey gooey cookie. Tell me that doesn’t warm your little heart on this cold Friday evening.

Thats right peeps, these icecream sandwiches are the sweets that you make when you need to show yourself a little love.
And why do I need to treat myself? Get ready for a laugh. Yesterday at work, I fell over in the most ridiculous, awkward way possible and was saved only by the fact that all the students had gone to class so nobody saw me. I hope! Let me paint you a picture…
I was just walking along, minding my own business when a number of things happened at once
1. I stumbled on a patch of uneven ground
2. My shoes started to slip off
3. I began to fall forwards (in actual slow motion) landing squarely on my knees
4. My hands were deep in my coat pockets so I began the slow motion descent to face plant on the paving
5. All I could do was cry out “oh no! oh no!” before I finally broke my fall with my head.
Thank goodness the only thing that was hurt was my pride and I quickly dusted myself off, put my shoes back on and fled the scene. Obviously I seriously needed to treat myself. Luckily I sometimes keep some extra cookie dough in my freezer just for this type of situation! (I am pretty uncoordinated so these types of situations happen a little more frequently than I would care to admit.) All you have to is pop your cookies in the oven for 20 minutes
then spoon a generous hunk of icecream (the chunkier the better) onto one cookies then sandwich the other on top. I used Packed Cookie Dough icecream – “vanilla flavoured icecream packed with chocolate chip cookie dough and chocolate chips” go hard or go home people.
BAM!
It is a race against the clock to eat these babies before the icecream melts, particularly if you like to eat your cookies while they are still warm from the oven. Actually, who am I trying to kid? These sandwiches will be gone in seconds. Surely, even if you haven’t had an embarrassing stack like I did, you will need these in your life to round off the week. That’s what Friday is all about isn’t it? What embarrassing thing happened to you this week to justify a weekend of treating yo self? Please tell me so that I don’t feel like such an utter klutz!
If you want to make these for yourself, you can use the recipe that I used which was the New York Times Chocolate Chip Cookie Recipe but be warned, this recipe has a huge yield. If you just want to make a couple, remember that you can refrigerate or freeze the dough and make more over the next couple of days. Perhaps host an icecream sandwich party? This recipe will work with whatever your favourite icecream flavour is but I do seriously recommend the Packed Cookie Dough Icecream. It’s creamy and studded with chocolate and chunks of cookie dough. You won’t regret it.
