It’s no secret, Mondays are The Worst. Unless its holidays. Then Mondays are pretty much just like every other day of the week. But seeing as we are in the midst of Term 2, we revert to the rule that Mondays are The Worst. Which, I think, is why the Cubans invented Mojitos. I know that its more of a summer drink (if you’re in the northern hemisphere right now then this would be perfect!) but I think that lime, mint and rum are a welcome combination at any time of the year.

Would you believe I grew this little bunch of mint on my balcony? Because now I think I have green thumbs!

A True Love of Mine: Mojitos

Mojitos are super easy. Just slice up some lime, add the rum, sugar and some mint leaves and muddle them all together. Top with soda water and more lime slices and mint leaves and bam! A tangy and refreshing drink to soften the edges of your Monday. And if you don’t have a nifty muddler, never fear. Before I was gifted my cocktail set I used the end of my rolling pin to squish all the delicious juice out of the limes and bruise the mint enough for the flavour to permeate. Improvisation is the word of the day in my kitchen!

So, for relatively little effort, you can unwind at the end of a particularly trying day. Although, i’ve now run out of rum so i’m not sure what i’ll be doing tonight to unwind. Perhaps i’ll have to lace up my runners and brave the chill for a couple of laps around the park. Or I could go the much easier route and bake some cupcakes… Mojito Cupcakes would be the logical next step… i’ll have to put my thinking cap on!

Mojito Recipe

Ingredients

1 ounce white rum
1 lime
8 mint leaves
1 tsp caster sugar
Ice
Soda Water

 

Method

1. Measure the rum, 2 wheels of lime, four mint leaves and the sugar into a tall glass
2. Muddle until the sugar is semi dissolved and the mint is nice and bruised
3. Add ice
4. Add rest of mint leaves and two more wheels of lime
5. Top with soda water and any garnish you like!

What can I say? I love sweets, in all shapes and sizes! You only live once, so why not indulge once in a while? Or, in my case, most of the time...
